This pancake recipe is packed with deliciousness and is super healthy. I guarantee you can’t just have one!
INGREDIENTS (Makes 5-6 pancakes)
1 cup flour
1 tbsp hemp seeds
1 tbsp chia seeds
1 tbsp flaxseeds
1 tbsp pumpkin seeds
½ cup of walnuts
½ tsp baking soda
½ tsp baking powder
½ tsp cinnamon
½ tsp salt
¼ tsp all spice (optional)
2 egg whites
2 tbsp melted butter
1 banana (crushed)
1 cup almond milk (or any milk of choice)
Method Combine all the seeds into a grinder or blender for a powdery texture. Crush bananas in a separate bowl. In another bowl, beat egg whites until fluffy. In a large mixing bowl, combine all dry ingredients and add milk by lightly stirring into the mix gently (don’t beat). Add crushed bananas and gently fold into batter. Add melted butter & walnuts. Add egg whites and continue to fold them into the batter (it’s ok if egg whites aren’t completely folded). The trick is to not over mix the batter and keep as many air pockets as possible. Otherwise, your pancakes will come out flat. You want them to be fluffy and light. Heat frying pan and add a bit of melted butter, and then add batter.
